The Carolina Reaper, one of the most famous chili peppers, held the Guinness World Record as the world’s hottest chili from 2013 until 2023.
Developed by Ed Currie of South Carolina, the Reaper averages an astonishing 1,641,183 Scoville Heat Units (SHU), with some peppers reaching up to 2.2 million SHU. Its fiery heat is due to capsaicin, a chemical compound evolved as a deterrent against mammals, which might damage the seeds, while encouraging birds, immune to capsaicin, to spread them.
Belonging to the species Capsicum chinense, the Carolina Reaper is a close relative of other notorious hot peppers, such as the Habanero. Its distinctive wrinkled appearance, scorpion-like tail, and surprising fruity undertones make it a standout in heat and flavor.
